Dabbling with Dove Decoys

This blog was originally posted on August 31, 2009 but it has been updated with new information.  I like to dabble with dove decoys. That’s really all I do, it seems. Bagging doves for the grill during Nebraska’s popular dove hunting season (which opens on Sept. 1) is, well, just a bonus actually. Normally, I run out of shells before even getting close to reaching my daily bag limit during the season. I get those erratic, fast-flying doves close enough for shots, but connecting …

Why I Hunt

I like to hunt. I really like to hunt. A lot. You could say it’s who I am. Why? The normal clichéd answers might be that I enjoy the recreation, exercise, spending time with friends and family, the taste of game meat, or even that I’m satisfying primordial urges. All of these are important, but what I enjoy most is that hunting melts the stress of everyday life from my body. When I hunt, whether I’m sitting in the whitetail …

Throwback Thursday: Exaggeration Postcards

Fishing and hunting yarns and photos have always been part of Nebraska’s great outdoor scene. Beginning in the early 1900s and for decades thereafter, Nebraska postcards depicted altered, exaggerated images of game, fish and agriculture. These were done to promote the unique aspects of a place or product as well as to document local history. They were also used to lure folks to the Cornhusker State to hunt, fish or visit. Considered western-style humor, these exaggeration postcards were extremely popular …

Painless Cooking

When all else fails, cook it slow. Turkey and goose legs, venison shoulders and even fish fillets. Get it safe to eat and then dress your dinner up from there. You’ll need a few ingredients: – aluminum foil pan – aluminum foil – water – meat of choice For a general rule of thumb, heat the oven to 250 degrees and place your meat of choice in the pan with just enough water to cover half of your dinner, and …

Food Week: Venison and Shrimp Vietnamese Spring Rolls

Those of you who read the magazine have probably realized that I am the “foodie” out of the bunch. I love to cook with wild game, and I have most fun creating new recipes or incorporating it into everyday dishes that people eat around the world. I’d even say that I enjoy cooking with wild game more than I do shooting it. I don’t care to sit in a blind for too long– forget it if it’s cold. But how I do …

Grilling an American Bird

For those of you that still have some turkey left in the freezer from the this past spring’s season it’s time to introduce the bird to the grill. Now there are lots of great ways to grill wild turkey, but one of my favorites is the shish-kabob. (Ironically, the term ‘shish-kabob’ has Turkish origins). They are simple, fun to make and extremely delicious. Start by cubing turkey meat into roughly 1 inch pieces. Oftentimes I give the meat an overnight, …
